Does anyone know how many Qantas platinum one / platinum / gold ff there are at all out of the mooted 10 million or so in total?

No.  Qantas don't, and probably never will, release that sort of information.

Last time QF released this information was when they were looking to float QFF (around 2007/8)

AT the time I think it was something like 6000 Plats from 6 million members (0.1% - or 3 standard deviations). Obviously the program has grown to 10 million, but I suspect mostly due to Woolworths link-in so suspect many will be bronze, but also an increase in FIFO workers who would earn Plat/Plat1

So I would be guessing at under 10000 Plats, and under 1000 PlatOnes

Ms Grant would not divulge the exact number of Platinum One members within the Qantas frequent flyer program, which has more than 10 million members.

But she said the figure was in the "thousands" rather than "tens of thousands".

Phil is correct, the only number Qantas will confirm is the overall number of Qantas Frequent Flyers, most of which aren't active. Qantas has however said that the number of P1s exceed one thousand, but that's as much disclosure that'll give. Anecdotally, Platinums are supposedly in the tens of thousands.

Perhaps the closest insight we can draw is from Hyatt Gold Passport, who have a similar number of total members and have rather uniquely disclosed some firmish numbers for their grades. They have over 16.5 million members, of which only just shy of three million actually stayed a night over the last year. 2.2 million of those active members had just base status, over 230,000 had mid-tier status, and over 37,000 had top tier status (and an undisclosed bunch of premium elites above that).

A large number of people have Qantas Frequent Flyer membership despite rarely flying, so I could believe a big cut if we took out mostly inactive flyers. And I could believe for Qantas Frequent Flyer Gold membership ranged in the hundreds of thousands region, Platinum in the tens of thousands, and P1 in the thousands (don't forget some CL's have the exotic designator code CLPO, marking them as Chairman's Lounge Platinum One's too).
