Does anyone have any advice when traveling on an Air New Zealand 767. How are the economy seats? Can I upgrade to business with Velocity points? Is it even worth an upgrade?

The seats are better than the VA 737s, as is the food. Each seat has AVOD. Try for 10A or10B if you have any status, as these seats have extra legroom.
