Best way to "use" extra status credit is either family pool another member to silver or companion gold at 500 SC.

The answer is yes. Velocity has a rolling 12 month calendar (unlike qantas), where your status credits are reviewed and assessed every day for the prior 12 months. So for your next goal, as long as you hit the requirement for platinum on any date (i.e. you have hit the required status credit amount in any 12 month window) you will go up to platinum.
