When I was there late last year I stayed near Wan Chai. My hotel booked my transfer and they ended up using "Hong Kong Shuttle". I got picked up in a private Mercedes Benz S Class at the airport (they wait for you at the gate with your name on a sign). The drive from the aiport to the hotel was about 45 minutes and it cost me $75 AUD. A couple of days later when I was heading back to the airport I just used a taxi and it cost me $50.00. But I'd happily pay the $25 extra again and have a private, sparkling clean Merc with an english speaking driver. Enjoy your trip!

Most hotels offer a transfer service. Hong Kong us ultra user friendly for it's size so don't be scared of the train that takes you directly into Kowloon. (And enables you to check your backs at the train station when departing.)

If you're on the island, I'd get the hotel to sort it.

You really cant go past the rail Airport Express which drops you right at Victoria Station at the top of Wanchai for minimal cost.  And on the return, there is a city checkin counter at the same station where you drop your bags and then board the train for the return trip, once at the airport proceed straight to security.
