What are the chances of getting a new J class QF24 BKK-SYD in March? What's the easiest way to check scheduled aircraft?

Look at the seatmaps on Expertflyer, for the first few days in March its showing a mix of both configs.

ExpertFlyer will give you access seat maps for flights you are interested in. Not sure how many queries you can make for free. TheQantasSource shows the history (if it shows 28J in the configuration column it is new J), about one in three flghts in the last month were on upgraded aircraft.

Go to RouteHappy.com and search dates. Whichever flight lists as 'Full flat pod' and not 'Recliner' is the one you'll want to aim for.
