As a long time Qantas Gold, I've recently moved to Dubai.
Is it possible to book an Emirates flight on a QF number from Dubai to Australia?
I'm unable to do it & may reluctantly have to change FF Programs, despite only wanting to stay a few years.

I don't think the agreement allows for it. Check on the QF website through a dummy booking.

You might need to go through a Travel agent?

You should be able to do this, e.g.:
34 WE 15JAN 0000
1EK:QF8414 F4 A4 J7 C7 D7 I7 Y9 /DXB 3 SYD 1 0200 2230 E0/388 13:30
B9 H9 K9 M9
2EK:QF8412 F4 A4 J7 C7 D7 Y9 B9 /DXB 3 SYD 1 1015 0700+1E0/388 13:45
3EK:QF8416 F4 A4 J7 C7 D7 Y9 B9 /DXB 3 SYD 1 2250 1940+1E0/388 13:50
I hope this helps.
I'm not entirely sure you can book with those QF flight numbers. Online websites are only showing EK numbers and the qantas site doesn't allow a booking. If you rang them I think they would sell you a ticket with an EK number.
