does anyone know when Etihad will release their May 15 earlybird fares ?

I can't help with May, but can share that Etihad's current early bird fares went on sale in early September and will sell through to the end of October, for travel between 1 February-24 March 2015 and 1 October-31 October 2015.

If May is a peak or shoulder period, then there's of course no guarantee that there will be early bird fares, but looking at the distance between September and February/March, logic would suggest November 2014 for fares in May 2015 – but again, that's not guaranteed. :)

I'm looking to book from September - October next year for flights to Europe, at the moment I can't book anything beyond August on their website.

That's pretty standard, air fares are usually only released 11 months out.

EY Earlybird fares are out for travel from 01Feb-26Sep 2015. Sale validity from 29Sep-31Oct 2014.

Class availability in Economy is E or U, Business Z or W, First class R. Mixed Y/J and J/F fares also available. 

Low Season fares start from $1,350pp plus taxes.
