I have got an upcoming trip to sydney in Qantas new business class but when I go on the seat selection page it still shows the sky beds page. Will Qantas update the website or will I just get luck of the draw.

How do you know your upcoming trip will be in new J? When are you flying? It'll be a lottery until the entire A330 fleet is refurbished.

The seat selection map for your flight will only get update if they schedule one of the newly refitted planes, and that won't be until closer to your departure date.
Additionally, as there's a reduction in the number of business class seats from 36 Skybeds on the existing configuration down to 28 Business Suites on the new configuration, there may be the potential need for reaccommodating passengers if they do schedule one of the newly refitted planes.

Indeed - although the ten A330-300s only have 30 Skybeds, it's the odd group of four international A330-200s that have 36 Skybeds.

The seats will begin to be installed in December 2014 but entire rollout will seemingly take almost two years

The first flight with the new seats hasn't even been announced yet... I'm not sure you can be certain that you will have the new seats at the moment.
