I been to Sri Lanka many times.
The Mount Lavinia hotel is a 4 star hotel, old, grand, but bit run down. Offer spectacular views of the Indian Ocean sunset and the food there is pretty good. Its of historical importance to Sri Lanka.
Another option for you is Galle Face Hotel. Again 4 star hotel. Recently refrubished and again offers great views of the Indian Ocean. The high tea there is legendary.
These are the main two I would recommend.

The Hilton is very dated but clean and the service is awesome and very friendly.
We do intend trying one of the above on our next stopover - the Galle Face was highly recommended by my work colleague.
