Will be in Peru for two months (late Nov-late Jan) - what is the best option for a SIM over there? I would anticipate using more data than calls, but would still like some call allowance.

Use Movistar, I can't bring myself to use Claro because Carlos Slim owns it. Data will be expensive

Try getting a US T-Mobile sim, and signing up for their Simple Choice $50 plan. It features unlimited 2G data overseas (i.e. outside of the US).
