I am planning a classic rewards trip to China using QFF points flying open jaw into Hangzhou and returning from Shanghai both on CX through Hong Kong. If I try to add a stopover at Hong Kong I am charged an extra 26,000 points per person - so was wondering if it is possible to book as direct connections through HK and then delay connections a few days once booked and save myself the points.

QFF doesn't have free stopovers. All itineraries are charged as a series of one ways except the oneworld award. I would say its highly unlikely that the phone agent will allow you to change dates without charging the extra points.
