Recommendations for local SIM cards in Thailand and Hong Kong. I'll need it for a mobile and a pocket wifi device in each location.

Thailand I have no idea, but pick Smartone/one2free in Hong Kong. Avoid carriers like 3 etc.

I always use TrueMove in Thailand, usually pick up a SIM on one of the lower floors of BKK at their store, where they help you choose a package and put the SIM in for you. I never had any issues with coverage in Hua Hin, Bangkok or Phuket and the speed when I was tethering was awesome.Definitely agree with Alvin, Smartone is brilliant for Hong Kong, again no coverage issues and the speed is pretty good (especially if you pick up their 4G SIM).
