With the Velocity Platinum Amex free flight, can you use it for 2 one ways?

For example would I be able to fly my wife and myself instead of 1 return booking?

The complimentary flight is return only (non-modifiable in this regard).  You can of course change the booking after making it, but then you are subject to paying change fees, etc., as per Amex Travel.  You are also free to make the booking in someone else’s name.

The terms of the card clearly specify a return ticket as follows:

Flight means a Virgin Australia domestic non-stop return flight in economy class between two selected Australian cities.

Do you know if you can book your partner's ticket through the Amex call centre?

Hank, yes you can book a ticket in any other person's name through the call centre. You may not be aware that there is a grace period of (I think) a couple of weeks at the end of your membership year where you can still book a free ticket for the previous year. This means that during this period you can book two tickets: one for yourself and one for your partner - i.e. one ticket for the previous year and one for the current year. I do this every two years.
