Sofitel guests have access to the 3rd party Elixr fitness centre in the Chifley Square building which is a full sized gym with sauna. Not sure about the others.
Virgin Australia - Velocity Rewards

The Living Well Health Club at the Hilton is superb, as is the Goodlife Health Club at the Westin - both operate as stand-alone gyms, and thus offer a good range of equipment and services. The facilities at the Pullman Hyde Park are very basic.

Hilton probably has the "best" gym in that it's of the size/standard (if not better) of a platinum fitness first. That being said my favourite is the Intercon and then the Sheraton on the Park.
I find the Intercon gym has a more personal feel and although it's not large by any means it has modern cardio equipment, a decent range of weights and a very hot sauna. You can also rent gym clothes which comes in handy too.
