How do they assign seats on these types of promotional flights? I assume there are more invited guests than premium class seats available.

Depends on the aircraft and the number of media invited, but these trips rarely see a large media contingent. Typically we're in business class because that's our speciality and that's what we are reviewing, although on the Qantas Boeing 787 delivery flight I made sure to spend a lot of time in the new premium economy seat.

If you look at the delivery flight for Cathay Pacific's first Boeing 777-300ER with its then-new premium economy seating, for example: the CX execs were in business class while media were in premium economy because that was 'the job'.

SQ have announced that Perth will be the second 787-10 destination starting in May 2018. Look forward to hearing reviews on this.
