I plan to have an extended holiday in Europe though based with family in UK
When I return to UK after a time in Europe does the UK immigration system re-set the date by which I have to depart or does it remain with the 6 months on original entry ?

I suspect that might in the near future depend on the terms of Brexit.

It resets the date.

It resets the date, no doubt at all. Bear in mind also you can also now use the fasttrack automated passport machines as an Australian passport holder when entering the U.K. through most major airports.

As above - When you arrive in the UK you have 6 months as a tourist, you can come and go and you will always have 6 months from your arrival date. However - the more times you come and go the more questions will be asked so make sure you have a fully printed itinerary and proof that you are financially independent as this will ensure any questions asked are easily resolved.
