All 737-800s owned by VA will be refitted and rebranded. The 737-700 series will not, and I believe there are a few older rented 737-800s that will not. They are expected to be circulated out of the fleet in the next few years as the new aircraft continue to arrive. Much in the same way that the Qantas 737-400 fleet (many of which are 20 years old+) reduces as the Next Gen 7373-800s with BSI and seat back IFE arrive.

The 737-800s owned by Virgin Australia NZ are being refitted in some way, however, I've not seen any indication of what sort of configuration will be at the front of the plane.
And I've asked people at Virgin quite frequently to find out too. Some have said that there's business-class seating with Premium Economy service (like some of the domestic services operated before business class came on board), and some have said that there's just standard economy with greater seat pitch and all-inclusive service (i.e. the same as what Air NZ has as "works deluxe").
Perhaps one of the AusBT journos might have better luck getting a definitive answer.
