I think one difference in the past has been meal service in ecconomy when comparing Emirates to Qantas.  Emirates ecconomy meals are always filling and the try is loaded with chocolate, cheese, buscuits, fruit (where as the old style Qantas ecconmy trays were a bit lean).  

Its kinda hard to compare it to the new QF International ecconomy meals as QF now serve a large(ish) hot meal, and offer a lot of accompaniaments.  I actually prefer this when travelling in ecconomy.  I flew SYD-LAX reccently, and for what ever reason was awake for the entire 12 hours.  Throughout the flight whilst I was reading, watching movies etc they came around multiple times with great snacks (Pizza, ice cream, cheese and buscuits, fruit, drinks) this was ever few hours so you were never left for 8 hours in darkness with your call bell as your only hope for a snack.

The other point of differentiation worth mentioning is IFE.  I am a rusted on Qantas fan but I am happy to say the ICE (Emirates) has to be the best IFE I have ever used.  Smooth, easy and with so many options.  The Qantas IFE on the A380 is still great and there is heaps to watch, but definately second to ICE.
