How would it work on a B737?

3 in the cockpit? Or would cabin crew fill the seat temporarily?

They dont have to be seated. Just present in the Flight Deck.

Air NZ has adopted this. On a 2 person flight crew, a FA will take place inside the flight deck when a pilot has left.

NZCAA has changed its stance so all NZ registered aircraft (commercially) have to comply with the 2-person rule. Air NZ and Jetconnect (Qantas) and Virgin Australia (NZ based aircraft) now use this rule. Domestic jetstar does not as it is an Australian based company.
