Uber won't pick up from within the LAX precint, it is recommended you jump on one of the free hire car company shuttles. Uber usually comes in at least half the price of a conventional taxi, hotel or shuttle bus services can be cheaper depending on your end destination.
Uber definitely will pick you up from LAX but UberX will not. When you order the Uber the app will ask which terminal you're at and the driver will normally call you to ask for the door number. Driver normally takes 15 minutes to arrive after ordering.
Bit of an UberX hack is to drop the pin for pick up in a hotel or street near the airport and then call the driver to alert you to your actual terminal pickup.
Why not try SuperShuttle or their ExecuCar option?
Several options and they pick up from LAX terminals. Since you've not specified where in Anaheim or how many travelling, I've checked using LAX-Anaheim Marriott as a sample..
1. Shared Ride Van - USD $17.00 per pax (max 9 passengers)
2. ExecuCar Sedan Service Meet and Greet - USD $117.00 (max 3 passengers)
3. ExecuCar SUV Service Meet and Greet - USD $158.00 (max 5 passengers)
4. Business Express Svc by ExecuCarExpress - USD $72.00 (max 4 passengers)
Can be booked in advance via SuperShuttle.com website or alternatively via phone on 1-800-BLUEVAN.

As another user has hinted at, there's always the option of going to one of the nearby airport hotels and ordering your UberX from there...

Yeah...we've got 4 bags between us. Not in the mood for lugging things around. But good point nevertheless!
Just got a quote from Prime Shuttle for private transfers in a town car on the way out and SUV on the way back. USD 160!!!
That's not too bad given a one-way transfer between the outer suburb and Tullamarine is about $100!
