I haven't noticed any deterioration in the quantity or quality of J-class F&B on QF's overnight flights from Singapore, Bangkok or Hong Kong to Sydney and on all bar two flights in the past six months meal service has been started within an hour after take-off.
I am not sure why the (airline) focus on time of leaving. Lots of people are connecting from "elsewhere" so the local time in SIN of HKG is irrelevant. Perhaps the best way forward is to extend Online preordering to allow people to "opt out" and get some sleep whilst others can be in whatever time zone they are still in.
