I have a few Questions relating to a potential gift idea, being that of a Qantas gift Voucher.
1. If the recipient was to make a flight booking,which totalled $3500, and they had been given a gift voucher for $500, can you use it to reduce the total cost of the booking to $3000?
2. Would that person receive QFF's and SC's on that flight?
Don’t do it! Qantas gift vouchers are possibly the most poorly designed gift vouchers in the world. Give a visa gift card instead.
Can you give me any specific examples why they are a poor choice?
My personal favourites from the terms and conditions...
If the full balance of the voucher is not redeemed in one transaction and the balance of the voucher is more than $2, a new voucher with the same expiry date will be issued for the unused portion. No subsequent voucher will be issued for amounts $2 or less.
... Cannot be used for multi-city, Classic Flight rewards or Points Plus Pay - Flights booking or redeemed for cash or other goods or services such as additional baggage or seat selection.
Only one voucher can be redeemed per booking.
Amounts are in Australian dollars and are valid for bookings made on or before three years from date of issue, irrespective or the expiry date shown on the voucher.
The number of people on a booking redeeming the voucher must be equal to the number of voucher recipients. The number of recipients listed cannot be changed.

Not Ideal, but I have one more question. You mention multi-city flights being ineligible. I use a little trick to accrue more status credits when flying to Queensland, whether it be Gold Coast, Sunshine Coast or Cairns....
I am from MEL and whilst I search and book return flights, I often pick flights that stop in Sydney (If i'm heading to the Gold Coast,) or Sydney/Brisbane If I am heading to cairns.
I will give you 2 examples:
In Jan I visited my cousin on the Gold Coast for a few days, and instead of earning 30 SC's for the return I earned 15 from MEL-OOL and on the return leg I earned 10 from OOL-SYD and 10 from SYD-MEL. Earning an extra 5 SC's.
In Feb I was booked MEL-SYD, SYD-CNS, CNS-SYD,SYD-MEL expecting to earn 50 SC's for my Cairns trip instead of the usual 30 if travelling non stop both ways. It ended up working in my favour as the outbound MEL-SYD was cancelled and I was rebooked on a MEL-BNE flight instead, earning an extra 5 SC's overall.
All the flights were pretty much the same price return for a holiday to Port Douglas.
Can I book return flights in this manner with a QF gift voucher or is that considered multi city?
In the end it was small things like that which really helped me get to Gold.

Booking return flights with a connection is just considered a return flight booking. By multi-city, they mean if you book your flights using the Multi-City tool on their website.
If you were considering gifting a flight voucher, I would agree with others and just give a Visa gift card. That way, you aren't limited to your airline or booking on Qantas.com (you can use travel agents or OTAs to get a cheaper price).
What airline or travel website would let the OP partially pay using a VISA gift card? In my experience it's all or nothing, which is one advantage of the gift card (it can be used as partial payment).
And in my experience, when using a Qantas gift card to pay for a flight, it's considered a 'voucher' flight and you are heavily penalised when seeking an upgrade, regardless of your QFF status. #justsaying

What is a 'voucher' flight?
Qantas staff have used the term to refer to flights that are gifted, or compensated flights. Basically a flight that you haven't actually paid for (whether that's cash or points). Either way, all of these passengers go to the bottom of the list when awarding upgrades regardless of their QFF status.

Booking return flights with a connection is just considered a return flight booking. By multi-city, they mean if you book your flights using the Multi-City tool on their website.

What airline or travel website would let the OP partially pay using a VISA gift card? In my experience it's all or nothing, which is one advantage of the gift card (it can be used as partial payment).
