SYD: Circular Quay (best location, gorgeous views)

MEL: South Bank (sterile, modern, next to city, in arts district) or South Yarrah (personality, great restaurant area)

In Cairns I'd suggest in town somewhere closer to the marina, for good options for dining and going out to the reef. In this area are Shangri-La, Hilton, also Pullman and Pacific International, among many others.

If you want a resort, then suck up the transfer time from Cairns Airport and go to Port Douglas or Fitzroy Island.

I enjoy the Rydges Melbourne on Exhibition Street... big rooms, central location which is walkable everywhere in the CBD

Highflyer the Rydges is my favourite hotel in Melbourne too and I stay there a lot. Great location, very good restaurant, rooms are nice and excellent value.

I'm a big sucker of the Park Hyatt in Melbourne, nicer than the Grand, great restaurant, and closer to my favourite South American restaurant..

Sydney I tend to stay at either the Westin on Martin Place or Radisson on O'Connell. Both are right between Pitt St mall and Circular Quay. Easy walk to either.

Melbourne I prefer Collins St or the vicinity.

Truly depends what you want? I'm more one for the smaller boutique hotels:

Melbourne: In the CBD for me it's Lindrum on Flinders Street, Adelphy on Flinders Lane or the QT on Russell st. Or The Olsen in South Yarra is nice (even though it's a construction site around there at the moment)
Sydney: I'm not a huge fan of the city but I stay at the QT for work and it's very good - big funky rooms, great bar etc.
