My understanding (although I haven't tried to redeem any yet), is you can use them just like regular money, except you have to have enough to pay for the whole amount. But I could be wrong.
For Australian airports members you need the whole amount of the base fare. Taxes are paid separately.
But otherwise as mentioned you use them just like dollars so if there is a seat you can book with cash then it'll be available to book with airports dollars.
Silver and above also get special access to discounted premium seats but these have limited availability and you can only buy them with airports dollars under certain conditions.

Also depends on whether you’re from AU or NZ. If you’re from NZ, you can take out a Kiwibank-issued Airpoints Mastercard, and then buy Airpoints Dollars for $1 NZD each. That way, you can always top up to bridge the gap between how many APD you have and the base fare.
